Can your students identify different kinds of cheese? Do they know how milk should taste and what might be wrong? Use this comprehensive resource to teach dairy food quality and evalution and help students prepare for the Dairy Foods Career Development Event.

The CD contains 142 PowerPoint slides covering the following topics:

Introduction to Dairy Foods: Provides an overview of the Dairy Foods Career Development Event; history of the dairy food industry in the United States; and a list of suggested career opportunities.

Milk Samples: Describes common defects that can occur in milk; how they influence quality and flavor; and steps for evaluation. Also included are step-by-step instructions to manufacture each sample for practice.

Cheese Identification: Contains images and descriptions of each cheese listed on the national resource list at the time of publication, and provides instructions and tips to identify each cheese.

Milker Units: Includes a description of how to evaluate milker units; explanations of why it is important to inspect milker units; and graphics to represent common problems.

Dairy vs. Nondairy: Explains the differences between dairy and nondairy products and provides guidelines to determine if a food product is made from dairy.

California Mastitis Test: Includes steps to perform the California Mastitis Test (CMT) and evaluate the results, as well as a discussion of how mastitis affects milk quality.
